Bean-to-Bar: Making Chocolate from Scratch + Chocolate Creations

About: Under the direction of a JCrafts Chocolatier, participants learn the process of making chocolate from scratch—bean-to-bar. The second part of the workshop involves participants molding kosher-themed and fun items out of chocolate while exploring the role that food plays in Jewish culture and the meaning and messages behind popular kosher delicacies. It’s a hands-on, gastronomical adventure!

Hands-on activities include harvesting the cocoa pods, roasting the beans, grinding them, winnowing and completing an 8-step process to create delicious mouth-watering chocolate. Using cutting-edge technology, they will temper and mold their own chocolate creations.

The new 35-foot screen and lighting rig adds a great dimension to the program, brings the workshop to life, and enhances the overall experience!

Food is culture. It is much more than simply what is on our plates and where we derive the energy to fuel our bodies. The daily act of eating is as much about family, community and human relationships. And because absolutely everyone has to eat, food is probably the most universally shared cultural experience that we have.

In this workshop, participants will reflect on their own food preferences and memories as they make chocolate from scratch. They will harvest the cocoa pods, roast the beans, grind them, winnow and complete an 8 step process to create delicious mouth-watering chocolate. Using cutting-edge technology, they will temper and mold their own chocolate creations while exploring the kosher diet and Jewish foods rich with symbolism and stories.

Participants will also uncover the traditions that Jewish people have maintained about which foods are eaten and which are not, as well as the manner in which food is prepared and the particular way in which it is eaten. This food culture has been passed from one generation to the next, stretching back thousands of years, commonly referred to as Kosher.

Since the Industrial Revolution and the advent of ready-to-use food products, the most common place where food is now made Kosher is not the kitchen, but the factory. More and more products are becoming Kosher certified and mass distribution means almost every major supermarket carries a Kosher line.

The Kosher industry accounts for $100 billion in annual sales. Children can begin growing into informed eaters at a young age. Informed eaters make better choices for their taste buds, health, community, and environment. The Kosher Chocolate Factory will have your group licking their fingers as they discover how food can connect us with the world around us.


 

The Art of Professional Truffle Making

About: Food is culture. Food is probably the most universally shared cultural experience that we have! In this workshop, participants are introduced to the art of truffle making and choose from a variety of fillings and ganaches. While the chocolate sets, participants take an in-depth look at the fascinating history of Jews and chocolate. The end result is shiny, beautiful, and mouthwatering chocolate truffles!

Hands-on activities include inserting a variety of ganaches, applying the outer layer of chocolate, and the processes of scraping clean the surface of the mold.
